What is a Danish roast pork sandwich?

At heart, it is beautifully simple. Flæskesteg is Danish roast pork – in our case pork belly roast – with crispy crackling. Put it in fresh bread with a few carefully chosen ingredients and you have a flæskestegssandwich. A great one combines juicy meat, crispy crackling, tart pickles and something creamy.

What does flæskesteg mean?

Literally, it means roast pork: pork roasted with the skin on. The skin is scored and salted before roasting so it puffs up and becomes crisp.

What is svær or crackling?

Svær is the crisp skin on the roast pork. When prepared properly, it is light, crunchy and full of flavour while the meat underneath stays juicy.

What food should I try in Copenhagen?

To taste Denmark, start with pork. Flæskesteg is one of the country’s most iconic dishes, and the sandwich version is perfect on the go. Another classic is smørrebrød: open rye-bread sandwiches with different toppings.

What is the difference between flæskesteg and smørrebrød?

Smørrebrød is served cold and open-faced on rye bread with carefully arranged toppings. Flæskesteg is warm roast pork, crispy crackling and soft bread. Smørrebrød is neat and composed; the roast pork sandwich is a little messier – and we think better for it.

Why is pork important in Denmark?

Pork has been central to Danish agriculture and food culture for centuries. Classics such as flæskesteg are therefore an important part of Danish identity.

Timing. Once the crackling is perfect, there is a short window when everything is balanced: crisp skin, juicy meat and the right overall bite. We call it the Golden Zone.

Do you only serve the classic version?

The classic is our foundation, but we also explore variations with different pickles, sauces and flavour combinations that keep the balance intact.

Why does crispness matter so much?

Without it, it is not a proper roast pork sandwich. The point is the contrast between juicy meat and crispy crackling in every bite.

What is the idea behind Sprød & Co.?

Simple food, made properly. Instead of a huge menu, we focus on one Danish classic and perfect everything from ingredients to flavour and crunch.

Metro: Kongens Nytorv (M1, M2, M3, M4). Bus: get off at Kongens Nytorv or Gammel Strand. On foot: five minutes from Nyhavn and two minutes from Strøget.

Is Sprød & Co. a restaurant or takeaway?

Sprød & Co. is primarily a takeaway sandwich shop, but we also have seating both outside and indoors.
